The Easiest Shrimp Burgers

These have to be one of my absolute summer favorites- trust me you need these!!



Ingredients

  1. 1 lb. wild shrimp de-veined and de-shelled

  2. 1 stalk orange carrot

  3. 1/2 red bell pepper

  4. 3 garlic cloves

  5. 4 shallot cloves

  6. 1 heaping handful of cilantro

  7. 3/4 GF DF breadcrumbs

  8. 1 egg

  9. Celtic sea salt, onion, chive, paprika, and black pepper to taste.

Directions

  1. In a food processor add veggies and egg. Once finely chopped add shrimp and breadcrumbs. I prefer my burgers with minimal veggie chunks so I blend the mixture until baby safe (my 18 month old loves these)! A finer texture also makes it easier to shape the burgers.

  2. Add a dash of celtic sea salt, onion, chive, paprika, and black pepper to taste.

  3. Prep mixture into burgers

  4. Heat cast iron skillet with 1 tbsp olive oil over medium heat

  5. Add shrimp burgers and lower heat to low. Cook low and slow for about 20 minutes. Cook until browned on both sides and internal temperature reaches 145 degrees.

  6. Enjoy!
