Southwest Halibut Salad

A perfect blend of refreshing light summer flavors... yum!


  1. 1 Large halibut steak cut in half

  2. 2 large sweet Italian peppers

  3. 1 small/medium red bell pepper

  4. 1/2 small/medium orange bell pepper

  5. 1 onion

  6. 1/4 English cucumber

  7. 3/4 can of black beans (I used Eden brand- these are already pressure cooked)

  8. 1 cup of organic sweet corn

  9. Extra virgin olive oil

  10. Lemon and limes

  11. 1 bunch of cilantro

  12. garlic, onion, paprika, sea salt, and black pepper


  1. Season halibut generously on both sides with garlic powder, onion powder, paprika, sea salt, and black pepper.

  2. Heat olive oil in a large skillet over medium heat. Add the halibut to heated skillet in a single layer- and let sit for about 4-5 minutes. Flip and cook for another 4-5 minutes or until internal temperature reaches 145 degrees.

  3. While cooking fish begin to chop all veggies.

  4. Once fish is cooked and veggies are chopped. Add together in a large bowl and mix.

  5. Rinse and add your black beans

  6. Add lemon and lime juice to taste (we used the juice of 2.5 large lemons and 3 limes), a generous drizzle of extra virgin olive oil, along with a little extra sea salt and black pepper. Garnish with cilantro!

  7. Enjoy!
