The best grain free pumpkin treat!
Ingredients
Crust
1 cup almond flour
1/2 coconut flour
1/4 tsp ginger
1/4 tsp clove
1/4 tsp nutmeg
3 tbsp ghee, grass fed butter, or coconut oil warmed
1 tsp vanilla extract
Dash of salt
2 tbsp organic maple syrup
Filling
1 can organic pumpkin
1/4 cup organic coconut sugar
1 tsp vanilla extract
1/2 tsp pumpkin pie spice
2 tbsp flax meal
DF Chocolate chips as preferred
Directions
Pre-heat oven to 350 degrees
Combine all dry ingredients in mixing bowl and mix thoroughly.
Add wet ingredients to dry ingredients and mix until mixture begins to clump. You may need to add more maple syrup if ingredients are too dry.
In separate bowl combine all filling ingredients together with chocolate chips
Line 9x9 baking pan with coconut oil
Line baking sheet with crust mixture. Pat down firmly.
Layer filling mixture on top of crust layer
Bake for 15-18 minutes, cover with tin foil
Let cool to firm up, slice and enjoy!
