Dates are a delicious sweet fruit. They are loaded with fiber and a variety of nutrients and minerals- such as selenium, copper, potassium, magnesium, vitamin C, and B vitamins.


I love dates not only because of their delicious taste but because they are a great whole food sweetener option for cooking and baking! This is an easy date bite recipe with ingredients added to support the gut and protein intake.
Baked Date Bites
Ingredients
25 dates (nut removed)
1 tbsp ACV
3 tbsp water
3 tbsp hemp hearts
1 tbsp green banana flour
1/2 cut quick cooking oats (organic, GF)--> for those of you not consuming grains you can use coconut or almond flour as a replacement
2 tbsp shredded organic coconut
1/2 scoop collagen peptides
Coconut and chocolate chips to top with
Directions
Pre-heat oven to 350 degrees and line with parchment paper
De-pit all dates and add all ingredients to food processor
Add ACV and water to food processor and blend with dates until combined
Add all other ingredients and blend until smooth.
Form into balls and line on baking sheet
Bake for 10 minutes
Let cool a touch and roll into chocolate chips or shredded coconut if preferred
Enjoy!
(sometimes I rip the bite into half fill with a couple chocolate chips and seal it back up! Much easier than rolling and getting the chocolate chips to stick).
