Blueberry Chocolate Chip Muffins

Oh my, let me tell you these are SO GOOD! Grain-free, gluten-free, and dairy-free!


3 Eggs

2 Bananas

1/4 Coconut oil

1/4 Olive Oil

1/2 Cup Blueberries

1/2 tsp. Baking Soda

1/2 tsp. Vanilla extract

1 1/2 cup of Cassava Flour

Additional blueberries to add in

Dairy Free Chocolate Chips or chocolate of choic


1. Preheat oven to 350 degrees and line muffin pan with olive oil or cupcake liners.

2. Add to blender eggs, bananas, coconut oil, olive oil, blueberries, baking soda, vanilla extract. Blend until smooth

3. After blended, pour mixture into bowl. Add cassava flour and mix with spatula.

4. Add blueberries and chocolate chips as preferred and fold into mixture.

5. Pour mixture into muffin pan - top with extra blueberries and chocolate chips as preferred.

6. Bake for about 30 minutes or until toothpick comes out clean.
